• 1/2 teaspoon salt, optional • 1 pound dried elbow macaroni or cavatappi noodles • 1 cup heavy cream • 6 ounces cheddar cheese, shredded • 3/4 cup parmesan cheese, shredded • 1/2 teaspoon pepper, optional


Step 1

In a large pot bring 4 quarts of water to a boil.

Step 2

Season the water with 2 teaspoons of salt.

Step 3

Cook the pasta in boiling water according to package instructions.

While the pasta is cooking, heat the cream in a heavy saucepan or cast-iron skillet over medium heat until the cream begins to bubble.

Step 5

Add in the cheddar and parmesan cheeses along with 1/2 teaspoon salt and 1/2 teaspoon pepper.

Step 6

Stir the cheese sauce until bubbly and the cheese has melted, about 5-7 minutes while stirring often.

Step 7

Once the noodles are cooked, add the drained pasta to the cheese sauce and stir until combined.
