Best of all, it only takes 30 minutes or less to see the dawn of a new breakfast on the table.
Ingredients
• 2 (15 ounce) cans of black beans, drained and rinsed • 1 1/2 cups medium salsa, plus more for serving • 1/2 teaspoon salt • 8 corn tortillas • 4 eggs, fried over medium Optional garnishes: • cotija cheese • cilantro • avocado • hot sauceDirections
Step 1
In a medium skillet on the stove-top over medium heat, add the black beans, salsa, and salt.
Step 2
Stir the mixture, bringing it to a simmer. Cook until most of the liquid has been absorbed, about 5-7 minutes.
Step 3
In a dry, separate skillet set over medium heat, warm the tortillas until they are soft with brown edges.
Step 4
On a plate, add the tortillas and top with 1 cup of the bean mixture and a fried egg.
Step 5
Garnish with the cotija cheese, salsa, avocado, cilantro, and hot sauce.
Step 6
