Ingredients• 6 pounds beef brisket, flat-cut and trimmed • 3 tablespoons kosher salt • 1 1/2 tablespoons black pepper, cracked • 1 (18 ounce) bottle BBQ sauce
Line a rimmed baking sheet with aluminum foil.
Ensure the brisket is dry using paper towels.
Season the brisket with the salt and pepper.
Cover the brisket with plastic wrap and refrigerate for at least 8 hours and up to overnight.
Preheat the oven to 300 degrees F. Remove the plastic wrap from the brisket.
Place a piece of parchment paper on top of the brisket.
Cover the pan with aluminum foil.
Insert an oven-safe thermometer into the thickest area of the brisket.
Place the brisket in the oven and cook until the thermometer reads 200 degrees F, about 3-4 hours.
