Beef Barbacoa

With this Beef Barbacoa, you can have all the delicacies of a night out at a Mexican restaurant in the comfort of your home. It’s as easy as combining and dumping into a slow cooker, and presto, you have a meal that will put your favorite restaurant meals to shame! Beef Barbacoa truly melts in the mouth and is packed with savory, citrus, herbaceous flavors, and just the right amount of heat. You’ll be amazed you made this yourself and will be even more amazed you haven’t tried to make it before!


• 3 pounds beef chuck roast, fat trimmed and cut into 2-inch chunks • 4 cloves garlic, minced • 2 chipotles in adobo sauce, chopped • 1 (4 ounces) can green chiles, diced • 1 small white onion, finely chopped • 1/4 cup lime juice • 2 tablespoons apple cider vinegar • 3 bay leaves • 1 tablespoon ground cumin • 1 tablespoon oregano, dried • 2 teaspoons sea salt, fine • 1 teaspoon ground black pepper • 1/4 teaspoon ground cloves • 1/2 cup beef stock or water


Step 1

Combine all of the ingredients in a large bowl and toss to combine.

Step 2

Place the mixture in a slow cooker and cook on low until the beef falls apart easily, about 6-8 hours.

Step 3

Shred the beef using two forks inside of the cooker.

Step 4

Stir the shredded beef into the cooking juices.

Step 5

Cover and cook for 10 minutes.

Step 6

Remove the bay leaves with tongs.

Step 7

Serve in tortillas or in a bowl!
