• 3/4 cup canned black-eyed peas, rinsed and drained • 2 cups tomatoes, chopped • 1 cup corn, rinsed and drained • 1 tablespoon jalapeno chile, optional, minced • 1 tablespoon lime juice • 1/2 teaspoon ground cumin • 1/2 teaspoon salt • cilantro, optional, to taste


Step 1

Mix together all of the ingredients in a large bowl.

Step 2

Set the salsa aside to allow the flavors to develop for 20-30 minutes.
