Ingredients
• 2 pounds chicken thighs, boneless and skinless • 1 teaspoon dried tarragon • 1/2 teaspoon salt • 1/2 teaspoon pepper • 1 cup water • 1/2 cup brown sugar • 2 tablespoons low-sodium soy sauce • 2 tablespoons balsamic vinegar • 1 tablespoon cornstarchDirections
Add the chicken to the slow cooker.
In a small bowl mix together tarragon, salt, pepper, and 1/2 cup of the water.
Pour the mixture over the chicken.
Cover and cook on high for 2 1/2 hours.
After 2 1/2 hours have passed, mix the brown sugar, soy sauce, balsamic vinegar, and cornstarch with the other 1/2 cup of water.
Heat the contents in a saucepan over medium heat on the stove-top until the sauce starts to thicken.
Pour the sauce over the chicken while still in the slow cooker and toss to coat.
Cook the chicken in the slow cooker for 1 hour on low.
Remove the chicken to a cutting board or baking sheet and shred with two forks.
Serve with the additional glaze on the side.
