Brown Sugar Pulled Chicken

This Brown Sugar Pulled Chicken is perfect for meal prep during hectic weeks. The tasty, sweet-and-salty chicken can be used for salads, tacos, quesadillas, or casseroles. • 2 pounds chicken thighs, boneless and skinless • 1 teaspoon dried tarragon • 1/2 teaspoon salt • 1/2 teaspoon pepper • 1 cup water • 1/2 cup brown sugar • 2 tablespoons low-sodium soy sauce • 2 tablespoons balsamic vinegar • 1 tablespoon cornstarch


Step 1

Add the chicken to the slow cooker.

Step 2

In a small bowl mix together tarragon, salt, pepper, and 1/2 cup of the water.

Step 3

Pour the mixture over the chicken.

Step 4

Cover and cook on high for 2 1/2 hours.

Step 5

After 2 1/2 hours have passed, mix the brown sugar, soy sauce, balsamic vinegar, and cornstarch with the other 1/2 cup of water.

Step 6

Heat the contents in a saucepan over medium heat on the stove-top until the sauce starts to thicken.

Step 7

Pour the sauce over the chicken while still in the slow cooker and toss to coat.

Step 8

Cook the chicken in the slow cooker for 1 hour on low.

Step 9

Remove the chicken to a cutting board or baking sheet and shred with two forks.

Step 10

Serve with the additional glaze on the side.
