Chicken & Potato Casserole

Nothing beats a plate full of tender chicken and hearty potatoes…except when both are in the same bite! Chicken & Potato Casserole layers hearty potato with savory poultry, with some sharp cheddar cheese and bacon for good (flavor) measure. This is rich and creamy, savory and scrumptious all in one dish. Chicken & Potato Casserole will become a staple in your home, because after one bite you’ll start planning when to make the next one!


• 1/4 teaspoon salt, or to taste • 1/2 teaspoon sugar • ground black pepper, to taste • 1 tablespoon ranch dressing • 1/4 cup heavy whipping cream • 2 medium-sized potatoes, peeled and cut into pieces • 8 ounce chicken breast, boneless, skinless, and cut into cubes • 2 slices Canadian bacon or bacon strips, cut into pieces • 4 tablespoons unsalted butter, cut into small pieces • 1 cup cheddar cheese, shredded and divided • 1 stalk scallion, green part only, cut into small rounds


Step 1

Preheat the oven to 350 degrees F.

Step 2

Lightly grease a 9x9 baking pan with cooking spray or butter.

Step 3

Combine the salt, sugar, pepper, ranch dressing, and heavy whipping cream in a small mixing bowl. Mix until everything is fully incorporated.

Step 4

In the bottom of the prepared baking pan, spread the potatoes and chicken in one single layer.

Step 5

Layer the bacon and butter as the second layer.

Step 6

Top with half of the cheddar cheese and the scallions.

Step 7

Pour the heavy cream over top of the casserole.

Step 8

Cover the baking dish with aluminum foil and bake for 1 hour.

Step 9

Remove the foil from the pan and bake for another 30 minutes.

Step 10

Remove the pan from the oven and sprinkle with the remaining cheddar cheese.

Step 11

Return the dish to the oven and bake until the cheese is slightly crusty, about 10 minutes.

Step 12

Remove the baking dish from the oven and serve immediately.
