Ingredients• 1 pound elbows pasta • 2 pounds ground beef • 1 medium yellow onion, diced • 1 teaspoon garlic, minced • 1 (28 ounce) can petite diced tomatoes, drained • 2 (16 ounce) cans kidney chili beans in mild sauce • 2 packets chili seasoning • salt, optional, to taste • pepper, optional, to taste • 2 cups cheddar cheese, shredded and divided
Preheat the oven to 400 degrees F.
Cook the pasta according to package directions until al dente.
Drain the pasta and set it aside.
In a Dutch oven, brown the ground beef over medium-high heat until cooked, about 5 minutes. Break up any clumps while cooking.
Transfer the beef to a plate and drain the Dutch oven of fat.
In the same pot, saute the onions and garlic oil until fragrant, about 2 minutes.
Add in the cooked beef, tomatoes, chili beans, and chili seasoning.
Season with salt and pepper to taste.
Reduce the heat to medium and simmer the mixture for 5 minutes.
Add the cooked pasta and 1 cup of the cheddar cheese to the chili. Mix well.
Transfer the mixture to a 9x13-inch casserole dish.
Top with the remaining 1 cup of the cheese.
Bake until the cheese has melted, about 10 minutes.
