Ingredients• 1 tablespoon olive oil • 1 cup celery, chopped • 1 cup onion, chopped • 1 cup carrot, peeled and sliced • 4 cloves garlic, minced • 8 cups chicken stock • 1 (1 pound) box Orzo • 2-3 cups chicken, cooked and shredded • 1 tablespoon parsley, minced • 1 teaspoon salt • 1/4 teaspoon pepper
Heat the olive oil in a large pot on the stove-top over medium heat.
Add the celery, onion, and carrots to the pot and cook until the onion turns translucent, about 7 minutes.
Add in the garlic and sauté until aromatic but not burning, about 2 minutes.
Add in the chicken stock and bring the mixture to a boil.
Add in the orzo and the cooked, shredded chicken breast.
Lower the heat to medium.
Add in the parsley, salt, and pepper.
Simmer until the vegetables are tender and the orzo is fully cooked through, having absorbed most of the liquid, about 20 minutes.
