Easy Beefy Noodle Casserole: ground beef in a rich tomato sauce, tossed with egg noodles then topped with plenty of cheese and baked to perfection. We don’t know about you but that sounds pretty delicious already! Easy Beefy Noodle Casserole is the perfect comfort food for cold weather, especially with the crispy cheese topping in every bite. Who says weeknight dinner has to be boring?
Ingredients
• 12 ounces egg noodles • 2 teaspoons olive oil • 1 1/4 pounds lean ground beef • 1 onion, finely chopped • 2 teaspoons garlic, minced • salt, to taste • pepper to taste • 16 ounces canned tomato sauce • 1 (15 ounce) can diced tomatoes, drained • 2 teaspoons Italian seasoning • 2 cups cheddar cheese, shredded • 2 tablespoons parsley, optional, choppedDirections
Cook the egg noodles according to package directions.
Preheat the oven to 400 degrees F.
Grease a 9x13-inch baking dish.
While the noodles are cooking, heat the olive oil in a large pan over medium-high heat.
Add the ground beef to the pan and cook for 4-5 minutes, breaking up the meat with a spatula.
Add the onion and garlic to the pan and cook, making sure to stir frequently, until onion has softened and beef is cooked through, about 5 minutes.
Season with salt and pepper.
Add the tomato sauce, tomatoes, and Italian seasoning to the beef, stirring to combine.
Drain the noodles and add them to the pan with the beef, tossing to combine.
Pour the beef and noodle mixture into the prepared casserole dish.
Top the casserole with the cheddar cheese.
Bake until the cheese is melted, about 10-15 minutes.
Sprinkle with the parsley and serve.
