Easy Black Bean Burger

Ingredients

For the burger: • 1 (15 ounce) can black beans, drained and rinsed • 1/2 green bell pepper • 1/2 small onion • 2 cloves garlic, peeled • 1 tablespoon chili powder • 1 teaspoon cumin • salt, to taste • freshly ground black pepper, to taste • 1 large egg, beaten • 2/3 cup whole wheat breadcrumbs For the chipotle mayo sauce: • 1 cup mayonnaise • 2 chipotle peppers in adobo sauce • 1 tablespoon adobo sauce, from a can of chipotle peppers in adobo sauce) • 2 teaspoons lime juice • salt, to taste • freshly ground black pepper, to taste

Directions

Step 1

Put the rinsed and drained black beans into a large mixing bowl, bloting them with a paper towel to remove any extra moisture.

Step 2

Mash the beans with a fork.

Step 3

Place the bell pepper, onion, and garlic cloves into a food processor and process until a finely minced mixture forms.

Step 4

Move the mixture to a fine mesh strainer to drain off the excess water.

Step 5

Add the vegetable mixture into the bowl with the beans.

Step 6

Mix in the chili powder, cumin, salt, and pepper until fully combined.

Step 7

Mix in the beaten egg until combined.

Step 8

Add in the bread crumbs, and form the mixture into 4-5 patties.

Step 9

Cook the burgers by grilling for about 4-5 minutes on each side, baking at 375 degrees F on a lightly oiled baking sheet for 10 minutes on each side, or cooking on the stove-top using a grill pan for about 4-5 minutes on each side.

Step 10

Add the mayonnaise, chipotle peppers, adobo sauce, and lime juice together in a food processor, processing until smooth.

Step 11

Season with salt and pepper.

Step 12

Serve the burgers with the chipotle mayo sauce with your desired burger toppings.
