Ingredients• 2 teaspoons extra-virgin olive oil • 8 ounces white button mushrooms, sliced • 1 small onion, chopped • 2 cloves garlic, minced • 1 1/2 pounds chicken breast, boneless, skinless, and cut into strips • 3/4 teaspoon kosher salt, more to taste • 1/2 teaspoon black pepper, more to taste • 1/4 cup low-sodium chicken broth • 4 ounces plain cream cheese • 1/2 cup mozzarella cheese, shredded Optional for serving: • steamed rice • 3 tablespoons fresh parsley, chopped
Heat a large skillet over medium heat on the stove-top.
Add the olive oil, and heat until shimmering.
Add the mushrooms and onions and sauté for 4-5 minutes.
Add the garlic and sauté for 30 seconds.
Season the chicken with the salt and pepper.
Increase the heat to medium-high, and add the seasoned chicken to the pan.
Sear the chicken until golden brown, about 6-8 minutes, turning them over once.
Add in the chicken broth and cream cheese, stirring until the cream cheese is melted fully and combined.
Sprinkle the mozzarella over the chicken.
Cover the pan with the lid, reduce the heat, and cook until the chicken is fully cooked, about 2-3 minutes. Use the salt and pepper to season to taste.
