Ingredients• 1 tablespoon olive oil • 1 small onion, diced • 4 cloves garlic, finely minced or pressed • 2 chicken breasts, boneless and cubed • salt, to taste • pepper, to taste • 1/2 teaspoon dried basil • 1/2 teaspoon red pepper flakes, optional • 1 (12 ounce) box dry pasta, of your choice • 3 cups chicken broth • 1 tablespoon lemon zest • 1/4 cup lemon juice, freshly squeezed • 1/2 cup light or heavy cream • lemon wedges, optional, for serving • basil, optional, for serving • parmesan cheese, optional, shredded, for serving
Heat a large skillet over medium on the stove-top.
Add olive oil.
Cook the onions until tender, about 4-5 minutes.
Add the garlic and cook until fragrant, about 1 minute.
Add the chicken, salt, pepper, basil, and red pepper flakes and saute until the chicken is cooked through, about 7-10 minutes.
Add the pasta and broth, cooking until al dente according to package directions.
Add the lemon zest, lemon juice, and cream, stirring to combine for another 1-2 minutes.
Remove the skillet from the heat.
Serve on plates or large bowls and top with lemons, basil, and parmesan!
