• 1 tablespoon olive oil • 4 (4-ounce) chicken breast halves, boneless and skinless • 1 (14.5-ounce) can of no-salt-added stewed tomatoes • 1 cup water • 1 teaspoon dried oregano • 1/4 teaspoon garlic powder • 1 1/2 cups instant brown rice • 1 (12-ounce) package frozen cut green beans • 12 pitted Greek olives, halved • 1/2 cup feta cheese, crumbled


Step 1

In a large nonstick skillet, warm the oil.

Step 2

Brown the chicken on each side in the oil.

Step 3

Stir in the tomatoes, water, oregano, and garlic powder to the chicken.

Step 4

Bring the chicken mixture to a boil, then reduce the heat.

Cover the skillet and simmer for 10 minutes.

Stir the rice and the green beans into the chicken mixture.
