Ingredients• 3 garlic cloves, minced • 1 tablespoon dried rosemary • salt, to taste • pepper, to taste • 2 pounds boneless pork loin roast • 1/4 cup olive oil • 1/2 cup white wine
Set the oven to 350 degrees F.
Crush the garlic with your rosemary, salt and pepper, and make it into a paste.
Score the meat with a sharp knife in several places and press in the garlic paste in the openings.
Rub in the meat with the garlic mixture and oil.
Place the pork loin into the oven, turning and basting the pork with the pan liquids.
Cook it until the pork is no longer pink in the center, about 1 hour. A thermometer inserted in the center should read 145 degrees F when the pork is fully cooked.
Remove the roast to a platter.
Heat the wine in the pan and stir to loosen browned bits of food on the bottom.
Serve and enjoy!
