• 2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces • 2 tablespoons coconut oil, melted • 3/4 teaspoon fine sea salt • 1 tablespoon light brown sugar, lightly packedDirections

Preheat the oven to 425 degrees F.
Step 2
Add the sweet potatoes to a large sheet pan.

Add the melted coconut oil, salt, and brown sugar on top, tossing to coat the sweet potatoes.

Spread the sweet potatoes out to arrange in an even layer. Don’t overlap the potatoes or you’ll end up with steamed potatoes instead.

Roast, flipping every 10-15 minutes, until golden brown and caramelized, about 27-35 minutes.
