Ingredients
• 2 tablespoons olive oil • 2 cloves garlic, minced • 1 yellow onion, diced • 2 pounds ground beef, turkey, or venison • 1 (28 ounce) can corn, drained • 1 (28 ounce) can black beans, rinsed and drained • 1 (28 ounce) can diced tomatoes • 3 cups water • 1 teaspoon salt • 1/2 teaspoon pepper • 1 teaspoon cumin • 2 tablespoons chili powder • 1 teaspoon cilantro • 1 (1 ounce) packet ranch dressing seasoning For the optional toppings: • cheese, to taste • sour cream, to taste • avocado, to taste • tortilla chips, to tasteDirections
Step 1
In a large saucepan, heat the olive oil over medium heat.
Step 2
Add the garlic and onion and saute until the onion is translucent, about 4-5 minutes.
Step 3
Add the ground beef to the saucepan and brown it until it's cooked through, about 5-7 minutes.
Step 4
Drain the beef mixture of fat.
Step 5
Add the beef to the slow cooker.
Step 6
Add the corn, black beans, diced tomatoes, and water into the slow cooker.
Step 7
Season with the salt, pepper, cumin, chili powder, cilantro, and ranch dressing packet. Stir together until mixed well.
Step 8
Cover and cook on low for 4-6 hours.
