Enchilada Casserole

• 1 pound ground beef • 1 can (10 ounces) enchilada sauce • 1 cup salsa • 6 (10 inch) flour tortillas • 2 cups corn, fresh or frozen • 4 cups cheddar cheese, shredded


Step 1

Preheat the oven to 350 degrees F.

Step 2

In a large skillet over medium heat, cook the beef until no longer pink, then drain.

Step 3

Add the enchilada sauce and salsa to the skillet, then set aside.

Step 4

Grease a 9x13 inch baking dish.

Step 5

Place 2 tortillas at the bottom (it’s ok if they overlap).

Step 6

Take 1/3 of the beef mixture and spread it over the tortillas.

Step 7

Add 1 cup of corn.

Step 8

Sprinkle the top with cheese.

Step 9

Repeat this process of layering until all of the ingredients are used.

Step 10

Bake uncovered until the cheese is bubbly, for 30 minutes.

Step 11

Broil at the end if you desire a slight browning of the cheese.

Step 12

Serve hot.
