Farro Salad

This Farro Salad is filled with majestic Mediterranean flavors that transport you directly to a dreamy vacation spot abroad! The tomatoes make it juicy, the lemon and feta give it some tang, and the farro provides delicious flavor and texture. Eat Farro Salad by itself or serve it alongside your favorite entree for a scrumptious, hearty Mediterranean meal!


• 2 pints cherry or grape tomatoes, halved • 1 tablespoon olive oil • 1 clove garlic, minced • 1/2 tablespoon sugar • salt, to taste • 1/2 teaspoon thyme, dried • 2 cups farro, cooked • 1/2 cup pine nuts • 1/2 cup feta cheese, crumbled • 1/4 cup herbs, like parsley, basil, oregano, cilantro, etc. • pepper, to taste For the lemon vinaigrette: • 3 tablespoons lemon juice • 2 tablespoons champagne vinegar • 1 1/2 tablespoons honey • 2 cloves garlic, finely minced or pressed • 1/4 teaspoon salt • 1/4 teaspoon pepper • 1/2 cup extra virgin olive oil


Step 1

Preheat the oven to 375 degrees F.

Step 2

Line a baking sheet with parchment paper. Drizzle the cherry tomatoes with olive oil.

Step 3

Sprinkle them with garlic, sugar, salt, and thyme. Roast in the oven for 45 minutes.

Step 4

Cook the farro according to package instructions. Once cooked, toss with a bit of olive oil to prevent it from sticking together.

Step 5

Toast the pine nuts in a skillet over medium-low heat until slightly golden and fragrant. Toss frequently to prevent burning.

Step 6

To make the dressing, whisk all of the ingredients together in a bowl.

Step 7

Combine the farro and tomatoes together in a large salad bowl.

Step 8

Toss in the feta, roasted pine nuts, and fresh herbs of your choosing.

Step 9

Add 1/4 cup of dressing at a time, to make sure you don't add too much.

Step 10

Season with salt and pepper to taste.

Step 11
