Frito Pie Casserole is the perfect weeknight casserole that will leave you full and looking forward to eating leftovers! This casserole is full of delicious flavors from the enchilada sauce, taco seasoning, hearty beans, crunchy Frito corn chips, creamy shredded Mexican cheese, fresh green onions, sour cream, and guacamole. Ingredients• 1 pound lean ground beef • 1 cup chopped onions • 1 (1 ounce) package taco seasoning mix • 2/3 cup water • 1 (19 ounce) can enchilada sauce • 1 (15 ounce) can black beans, drained, rinsed • 1 (9.25 ounce) bag Fritos corn chips • 2 cups Mexican cheese blend, shredded and divided • 1/4 cup green onions, chopped • 1 cup sour cream • 1 cup guacamole, refrigerated
Preheat the oven to 350 degrees F.
Spray 9x13-inch glass baking dish with nonstick cooking spray.
Cook the beef and onions over medium-high heat in a nonstick frying pan, stirring frequently, until brown, about 6-8 minutes. Drain the fat from the pan.
Stir in the seasoning mix and water.
Bring the mixture to a boil, then reduce the heat to medium.
Simmer uncovered until thickened, about 3-4 minutes.
Stir in the enchilada sauce and black beans and cook until heated through, about 1-2 minutes.
Place 4 cups of the corn chips in a single layer in a baking dish.
Top with 1 cup of the cheese.
Spoon the beef mixture over the cheese and top with the remaining 1 cup of cheese.
Bake in the oven until the cheese is melted and the edges are bubbly, about 18-20 minutes.
Top with any remaining corn chips and the green onions.
Serve with sour cream and guacamole.
