Homemade Chicken Taquitos

These delicious Homemade Chicken Taquitos are perfect as an easy appetizer or for a quick dinner! With warm seasoned chicken and gooey cheese inside, Homemade Chicken Taquitos are the perfect vessels for your favorite toppings like sour cream and guacamole. Pair with rice and beans for a full meal, or serve with dip as an appetizer.


• 12 corn tortillas • 1 tablespoon taco seasoning • 1 1/2 pounds chicken breast, cooked and shredded • 2 cups mozzarella, shredded • 2 cups iceberg lettuce, shredded • 1 cup sour cream, optional • 1 cup guacamole, optional • 1 cup pico de gallo, optional • canola oil, for frying


Step 1

Wrap the tortillas in a paper towel.

Step 2

Warm them in the microwave for about 1 minute.

Step 3

In a large mixing bowl add together the taco seasoning, shredded chicken breast, and mozzarella.

Step 4

Using 1 warmed tortilla each time, measure out about 1/3 cup of the chicken filling, ladling it onto the center of the tortilla.

Step 5

Tightly roll up the tortilla with the filling, sticking a toothpick through the tortilla to hold it together while it fries.

Step 6

Repeat with the rest of the tortillas

Heat up the canola oil over medium heat in a skillet or pan until the oil is glistening.

Step 8

Gently fry the prepared tortillas in small batches until they are a light brown, rotating them every 1-2 minutes., about 4 minutes.

Step 9

Transfer the fried tortillas to a plate.

Step 10

Top with the shredded lettuce, sour cream, guacamole, and pico de gallo.
