Ingredients• 12 corn tortillas • 1 tablespoon taco seasoning • 1 1/2 pounds chicken breast, cooked and shredded • 2 cups mozzarella, shredded • 2 cups iceberg lettuce, shredded • 1 cup sour cream, optional • 1 cup guacamole, optional • 1 cup pico de gallo, optional • canola oil, for frying
Wrap the tortillas in a paper towel.
Warm them in the microwave for about 1 minute.
In a large mixing bowl add together the taco seasoning, shredded chicken breast, and mozzarella.
Using 1 warmed tortilla each time, measure out about 1/3 cup of the chicken filling, ladling it onto the center of the tortilla.
Tightly roll up the tortilla with the filling, sticking a toothpick through the tortilla to hold it together while it fries.
Repeat with the rest of the tortillas
Heat up the canola oil over medium heat in a skillet or pan until the oil is glistening.
Gently fry the prepared tortillas in small batches until they are a light brown, rotating them every 1-2 minutes., about 4 minutes.
Transfer the fried tortillas to a plate.
Top with the shredded lettuce, sour cream, guacamole, and pico de gallo.
