Honey Orange Glazed Chicken Thighs

• 1/2 cup cider vinegar • 1 cup orange juice • 1/4 cup honey • 1/2 cup packed brown sugar • 2 tablespoons chili powder • 1 tablespoon ground cumin • 1 tablespoon ground coriander • 2 pounds chicken thighs • 1 tablespoon olive oil • salt, to taste • pepper, to taste


Step 1

In a small saucepan, combine the cider vinegar, orange juice, honey, brown sugar, chili powder, cumin, and coriander.

Step 2

Bring the mixture to a boil over the stove-top, then reduce heat and let simmer until the sauce has been reduced to about 1 cup, about 35-45 minutes.

Step 3

In a medium-sized saucepan, add the olive oil and set to medium-high heat.

Step 4

Salt and pepper the chicken thighs and cook until 165 degrees F in the center, or until no longer pink.

Step 5

Pour the glaze on top and let simmer for 1-2 minutes, making sure the chicken is well coated with the glaze.
