Ingredients• 1 cup zucchini, grated • 1/4 cup carrot, grated • 1/4 cup seasoned bread crumbs • 1/4 cup feta cheese, crumbled • 1/4 cup fresh basil, chopped • 1 egg • 1/2 teaspoon salt • 1/4 teaspoon ground black pepper • 1/8 teaspoon dried oregano
Preheat the oven to 400 degrees F.
Spray a mini-muffin tin with cooking spray.
Combine the zucchini and carrot in a large bowl, squeezing out any excess water with a paper towel.
Add the breadcrumbs, feta cheese, basil, egg, salt, black pepper, and oregano into the zucchini-carrot mixture.
Scoop the mixture using spoons or a mini ice cream scoop into the prepared muffin tin.
Press each scoop into its muffin cup with the back of a spoon.
Bake until the tops are golden brown, about 15-18 minutes.
