Ingredients• 4 teaspoons garlic, minced • 1 1/2 teaspoons lemons rinds, finely shredded • 1 teaspoon dried rosemary, crushed • 1/2 teaspoon salt • 1/2 teaspoon dried sage, crushed • 1/2 teaspoon pepper • 4 pork loin chops, about 1 1/4-inches thick each • 2 tablespoons oil, neutral-flavored
Preheat the oven to 350 degrees F.
Combine the garlic, lemon rind, rosemary, salt, sage, and pepper.
Trim the fat from the pork.
Rub the spice mixture onto both sides of each pork chop.
Place the chops on a rimmed baking sheet
Bake until cooked through, registering 145 degrees F, about 45 minutes.
Heat the oil in a cast-iron skillet or large frying pan on the stovetop over a hot heat.
Remove the chops from the oven.
One at a time, brown each side of the chop until a jacket forms, about 30 seconds-1 minute per side. You don’t want to cook it any more than that since it is already fully cooked internally. This step is just to create a golden-brown jacket on the meat.
Let the meat rest for at least 5 minutes before serving.
