• 1 cup butter, softened • 2 cups sugar • 2 large eggs, room temperature • 2 teaspoons lemon zest, grated • 2 teaspoons lemon extract • 4 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon salt • 1 cup buttermilkDirections
Beat together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well each time before adding the next one.
Beat in the lemon zest and extract.
Whisk together the flour, baking soda, and salt in a separate large bowl.
Add the butter mixture and the buttermilk into the bowl with the dry ingredients mixture, alternating between them and adding about 1/3 of each at a time.
Cover and refrigerate the bowl until the dough’s gluten relaxes and the butter solidifies, about 1 hour 45 minutes.
Preheat the oven to 375 degrees F.
