Ingredients• 6 chicken breasts • 24 ounces baby potatoes, cut into quarters • olive oil, to taste, for drizzling • 1 package ranch dressing mix • black pepper, to taste • 6 slices bacon, cooked and chopped • 4 ounces cheddar cheese, grated • chives or scallions, optional for garnish
Preheat the oven to 400 degrees F. Put a baking sheet in the oven to heat up.
Toss the potatoes in a large mixing bowl, with about 1/2 tablespoon of the olive oil and 1/2 of the ranch dressing mix.
Season the potatoes with black pepper and set them aside.
Drizzle the chicken breasts with the olive oil.
Garnish the chicken with the remaining 1/2 of the ranch dressing mix. Turn the chicken breasts to coat them evenly on each side.
Remove the hot sheet from your pre-heated oven.
Arrange the chicken breasts and potatoes on the prepared pan.
