• 4 (4-ounce) turkey breast cutlets • kosher salt, to taste • fresh pepper, to taste • 1/3 cup seasoned bread crumbs • 2 tablespoons parmesan cheese • 2 large egg whites, beaten • 1 tablespoon butter • 1 teaspoon olive oil • lemon wedges, optional, to taste, for serving


Step 1

Season the turkey breasts with salt and pepper.

Step 2

Combine the breadcrumbs and parmesan in a medium bowl.

Step 3

Add the egg whites to another medium bowl.

Step 4

Dip the turkey breasts into the egg white mixture and then in the breadcrumb mixture, shaking off any excess.

Heat a large non-stick frying pan on medium heat.

Add the butter and oil.

When the butter is melted, add the cutlets and cook until evenly golden brown and cooked through at 165 degrees F, about 6 minutes per side.

Step 8

Serve with lemon wedges.
