IngredientsFor the sauce: • 1/2 cup peanut butter • 1 (15 ounce) can crushed tomato • 1 cup chicken stock • 1 tablespoon honey • 1 teaspoon ground cumin • 1 teaspoon coriander • pepper flakes, to taste For the chicken: • 8 chicken thighs, boneless and skinless • 2 tablespoons soy sauce • 1 tablespoon oil, neutral-flavored • 1/2 medium onion, finely minced • 3 cloves garlic, finely minced • 1 tablespoon ginger, minced • sea salt, to taste • pepper, to taste • cilantro, optional, minced, to serve
Whisk together the peanut butter, crushed tomato, chicken stock, honey, cumin, coriander, and pepper flakes in a medium bowl.
Cut the chicken into small pieces and place them in a large bowl.
Add the soy sauce and mix.
Heat the oil in a large, non-stick pan over medium-high heat.
Carefully place the chicken and soy sauce in the pan. Move the chicken around into a single layer.
Allow the chicken to cook undisturbed for 5 minutes, then turn the chicken over.
Let it cook on the other side for 5 minutes. The chicken should be cooked through, reading 165 degrees F when tested with a meat thermometer.
Add the onion in with the chicken and allow it to cook until transparent, about 3 minutes.
Add in the garlic and ginger, cooking until fragrant, about 1 minute.
Pour the peanut butter sauce over the chicken and allow it to cook until it thickens.
Add salt and pepper to taste.
Serve with the minced cilantro!
