• 1 cup sushi rice, short-grain and uncooked • 1/2 cup cider vinegar • 1 tablespoon sugar • 1 small red onion, thinly sliced • 1/3 cup mayonnaise • 4 teaspoons sriracha chili sauce • 1 pound chicken breast, boneless and skinless • 2 tablespoons reduced-sodium soy sauce • 2 teaspoons toasted sesame oil • 1 teaspoon honey • 1 medium ripe avocado, peeled and sliced • 1/2 small cucumber, thinly sliced • 1 cup alfalfa or bean sprouts • green onions, to taste, slicedDirections
Cook the rice per package instructions.
Whisk together vinegar and sugar until dissolved.
Add red onions to the vinegar mixture.
Place the red onion mixture in a sealable jar and refrigerate for 30 minutes.
Stir together the mayonnaise and chili sauce.
Refrigerate the sriracha mayo and cover.
Toss the chicken, soy sauce, sesame oil, and honey in a large skillet or wok.
Cook over medium-low heat until the chicken is cooked through at 165 degrees F, about 5-6 minutes per side.
Shred the chicken.
