Ingredients• 1 pound bulk Italian sausage • 1 (14.5-ounce) can of diced tomatoes with basil, oregano, and garlic • 1 (15.5-ounce) can of cannellini beans, rinsed and drained • 1 1/2 cups water • 1 1/2 cups instant rice, uncooked • 1/4 cup parmesan cheese, grated, plus more for garnish, if desired • 1/2 cup mini pepperonis, sliced • fresh basil, optional, chopped, to taste
In a large skillet over medium heat, cook the sausage, breaking into crumbles and cooking until no longer pink, about 5-7 minutes.
Drain the excess grease from the skillet.
Add the diced tomatoes, cannellini beans, water, and rice to the sausage.
Return the skillet to the heat and bring the sausage mixture to a boil.
Cover the skillet and transfer away from the heat. Let it stand for 5 minutes.
Fluff the sausage mixture with a fork; stir in the 1/4 cup cheese.
Top the cheesy-sausage mixture with the pepperonis, additional cheese, and basil.
