• 1 tablespoon olive oil • 4 large eggs, lightly beaten • 1/4 cup half and half • kosher salt, to taste • freshly ground black pepper, to taste • 8 mini croissants, halved horizontally • 4 ounces ham, thinly sliced • 4 slices cheddar cheese, halved


Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Add the eggs to the skillet and cook, whisking, until they just begin to set, about 4-5 minutes.

Step 3

Gently whisk in the half and half.

Step 4

Season with salt and pepper, to taste.

Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes.

Set the eggs aside.

Fill the croissants with the eggs, ham and cheese to make 8 sandwiches.

Wrap the sandwiches tightly in plastic wrap and place them in the freezer.

To reheat the sandwiches, remove the plastic wrap from the frozen sandwich and wrap in a paper towel.

Place the sandwich into the microwave until heated through completely, about 1-2 minutes.
