Ingredients• 2 tablespoons olive oil, divided • 1/2 cup onion, diced • 4 cloves garlic, minced • 1/2 teaspoon dried basil • 1/2 teaspoon dried oregano • 1 (14 ounce) can diced tomatoes, juices reserved • 1/3 cup water • 1/4 cup chicken broth • 1 teaspoon sugar • 9 ounces cheese tortellini • parmesan cheese, optional, for garnish • basil, optional, for garnish • parsley, optional, for garnish
In a large saucepan, add 1 tablespoon of the olive oil and heat over medium heat.
Add the onion, and cook until it is soft and translucent, about 5-7 minutes.
Add in the garlic, basil, and oregano, stirring until the mixture is fragrant, about 1 minute.
Add in the tomatoes with their juices, water, broth, and sugar, using a spoon to mash the tomatoes lightly.
Bring the mixture to a boil, and reduce the heat to a simmer.
Allow the sauce to simmer until thickened, about 10 minutes.
Cook the tortellini according to package directions until al dente.
Drain the tortellini and add it to the tomato sauce.
Add in the remaining 1 tablespoon of the olive oil and taste for seasoning.
Sprinkle the top with parmesan and some fresh parsley or basil.
