Ingredients
• 1 pound red potatoes • 1/2 medium onion, chopped into chunks • 2 cloves garlic, minced • 3 tablespoons olive oil • 1 tablespoon smoked paprika • 1/2 teaspoon salt • 1/4 teaspoon red pepper flakes • 3-4 eggs • 1/2 cup cheddar cheese, shredded • parsley, chives, and other fresh herbs, optional, to taste, for toppingDirections
Preheat the oven to 400 degrees F.
Cut the potatoes in half lengthwise and then in half again lengthwise.
Dice the potato quarters into 1/2-inch pieces.
Add the potatoes and the onion to a sheet pan.
Add the garlic, olive oil, paprika, salt, and pepper flakes.
Toss everything together until the potatoes and onions are coated.
Bake for 10 minutes.
Stir and flip the potatoes.
Bake until the potatoes are tender, about 10-15 minutes.
Transfer the sheet pan from the oven.
Create a well in the center of the sheet pan.
Crack the eggs in the middle.
Sprinkle the cheese over the eggs and potatoes.
Bake until the egg whites have set and the egg yolks reach the desired firmness, about 7-12 minutes.
Transfer the sheet pan from the oven.
Sprinkle the herbs on top.
Serve.
