Roasted Tomatoes

Perhaps you enjoy tomatoes in your salad or in your pasta, but we’re here to tell you that Roasted Tomatoes are an underrated side dish to accompany any meal. These tomatoes are roasted to perfection after being tossed in olive oil, balsamic vinegar, garlic, basil, and parmesan. Roasted Tomatoes are fresh, flavorful, and go beautifully with grilled meat or fish!


• 2-3 pounds cherry tomatoes • 1 tablespoon olive oil • 1/2 tablespoon balsamic vinegar • 1 clove garlic, minced • 1 tablespoon fresh chopped basil or 1/2 teaspoon dry basil • 2 tablespoons shredded parmesan cheese, optional • salt, to taste • pepper, to taste


Step 1

Set the oven temperature to 450 degrees F.

Step 2

Slice the tomatoes in half, and add them to a mixing bowl.

Step 3

Toss with all other olive oil, balsamic vinegar, garlic, basil, cheese, salt, and pepper.

Step 4

Spread the tomatoes out on a rimmed baking sheet and place them in the oven.

Step 5

Roast for 10-20 minutes.

Step 6

Serve warm.
