• 1 teaspoon dijon mustard • 1 teaspoon honey • 2 tablespoons sherry vinegar • 1/4 cup extra-virgin olive oil • kosher salt, to taste • black pepper, to taste • 9 cups (1 bunch) of kale, stems removed and torn into bite-size pieces • 1 apple, cut into matchsticks • 3/4 cup white cheddar, shredded or grated • 1 1/2 cups rotisserie chicken, shredded • 1/2 cup pumpkin seeds


Step 1

In a small bowl, whisk together the dijon mustard, honey, and sherry vinegar.

Step 2

Slowly, while whisking constantly, add the olive oil. This should help the dressing emulsify.

Step 3

Season the dressing with salt and pepper.

Step 4

In a large bowl, toss the kale with the dressing.

Step 5

Use your hands to massage the kale until it becomes tender, about 3 minutes.

Step 6

Toss in the apple, cheddar, and chicken.

Step 7

Top the salad with pumpkin seeds.
