Ingredients• 6 large eggs • 1/4 teaspoon salt • 1/8 teaspoon pepper • 1 tablespoon butter • 1 (1-pound) round loaf French bread • 6 ounces sliced deli ham, divided • 3/4 cup Monterey Jack • cheese, shredded and divided • 3/4 cup cheddar cheese, shredded and divided • 1/2 medium sweet red pepper, thinly sliced • 1 medium tomato, thinly sliced
Preheat the oven to 350 degrees F.
Whisk the eggs, salt, and pepper together.
Heat the butter in a large skillet on the stove-top over medium heat.
Pour the egg mixture into the hot skillet.
Cook and stir the eggs until the eggs thicken and no liquid remains, for about 5 minutes.
Remove the skillet from the heat.
Cut 1/4 of the French bread loaf off the top. Hollow out both parts of the loaf, creating a 1/2-inch shell.
Pour 1/4 of the ham in the bread bottom.
Add half of the Monterey Jack and cheddar cheese.
Layer in the red pepper, scrambled eggs, tomato, and the remaining ham, Monterey Jack, and cheddar cheeses.
Press the layers gently together, and replace the bread top.
Wrap the bread tightly in foil.
Bake until the loaf is heated through, about 25-30 minutes.
Let it stand for at least 10 minutes before serving in wedges.
