Shrimp and Grits

Old-fashioned summer comfort takes many forms, but one of the most delicious is Shrimp and Grits! The savory corn flavor highlights the sweet shrimp flavor, and both benefit from the richness of butter and the sharpness of cheddar cheese. Shrimp and Grits is a hearty and nurturing meal that works just as well as a breakfast as a dinner. Creamy and stick-to-your-ribs filling, this meal lets you truly relax after a long day.


• 4 cups water • salt, to taste • pepper, to taste • 1 cup stone-ground grits • 3 tablespoons butter • 2 cups sharp cheddar cheese, shredded • 6 slices bacon, chopped • 1 pound shrimp, peeled and deveined • 4 teaspoons lemon juice • 2 tablespoons parsley, chopped • 1 cup scallions, thinly sliced • 1 large clove garlic, minced


Step 1

Bring the water to a boil in a pot.

Step 2

Add in the salt and pepper.

Step 3

Add in the grits, cooking until the water is fully absorbed by the grits, about 20-25 minutes.

Step 4

Remove the pot of grits from the heat.

Step 5

Stir in the butter and cheddar cheese.

Step 6

Fry the bacon in a skillet until they are crispy and browned.

Step 7

Drain the bacon, reserving about 1 1/2 tablespoons of the grease.

Transfer the bacon pieces to a plate, and set them aside.

Drain and rinse the shrimp, patting them dry.

Add the shrimp to the skillet with the bacon. Cook the shrimp until it turns pink, about 2-3 minutes per side.

Add in the lemon juice, chopped bacon, parsley, scallions, and garlic, sautéing for 3 minutes.

Pout the grits into your serving bowl.

Add in the shrimp mixture and mix it well.
