Ingredients• 1/4 cup lime juice • 1 clove of garlic, minced • 1 teaspoon chili powder • 1/2 teaspoon salt • 1/2 teaspoon ground cumin • 2 tablespoons olive oil, divided • 1 1/2 pounds of chicken breast, boneless, skinless, and cut into strips • 1 medium onion, cut into thin wedges • 1/2 medium sweet red pepper, cut into strips • 1/2 medium sweet yellow pepper, cut into strips • 1/2 medium green pepper, cut into strips • 1/2 cup salsa • 12 (8-inch) flour tortillas, warmed • 1 1/2 cups cheddar cheese or Monterey Jack cheese, shredded
In a medium bowl, mix the lime juice, garlic, chili powder, salt, ground cumin, and 1 tablespoon of olive oil.
Add the lime mixture to the chicken and toss to coat.
Let the chicken stand for 15 minutes.
In a large nonstick skillet, heat the remaining olive oil over medium-high heat.
Sauté the onions, red peppers, yellow peppers, and green peppers until they are crisp and tender, about 5-7 minutes.
Transfer the onions and the peppers from the pan.
In the same skillet, sauté the chicken mixture until it is no longer pink, about 3-4 minutes.
Stir the salsa and the pepper mixture into the chicken mixture until it is heated through and the chicken is cooked at 165 degrees F, about 3-4 minutes.
Serve the fajitas in the flour tortillas, sprinkled with cheese.
