• 1 tablespoon olive oil or butter • 6 cloves garlic, minced • 1 cup heavy cream • 1/3 cup chicken broth • 6–8 chicken thighs, skinless and bone-in • 1 tablespoon Italian seasoning • 1 teaspoon crushed red chili pepper flakes, optional • sea salt, to taste • fresh cracked black pepper, to taste • 1/2 cup sun-dried tomatoes, chopped • 3/4 cup parmesan cheese, grated • 2 cups spinach, chopped, packed


Step 1

Heat the oil or butter in a medium saucepan over medium heat.

Step 2

Add the garlic and saute until fragrant, about 1 minute.

Step 3

Add the cream and chicken broth.

Step 4

Set the heat to low and bring the mixture to a simmer for about 10 minutes. The sauce should thicken.

Place the chicken thighs at the bottom of your slow cooker.

Step 6

Season the chicken thighs lightly with Italian seasoning, crushed red chili pepper flakes, sea salt, and black pepper.

Top the chicken thighs with the sun-dried tomatoes.

When the cream sauce is thickened, lower the heat and whisk in the parmesan cheese a little at a time until smooth.

Adjust the seasoning for the cream sauce if needed.

Pour the cream sauce over the chicken thighs in the slow cooker. Get as much sauce as possible on top of the chicken thighs.

Cover the slow cooker and cook for 3-4 hours on high or 6-8 hours on low.

When the cooking time is over, gently remove the chicken from the slow cooker and set it aside.

Turn the slow cooker on high if it isn’t already.

Add the chopped spinach to the slow cooker and stir until the spinach wilts, about 3 minutes.
