Sometimes, for the best flavors, you have to be like a bird and fly south. Southern Fried Corn bursts with natural sweetness slathered in richness and meatiness; it adds a beam of brightness to any main course, whether it's Thanksgiving dinner or an ordinary weekday meal. Given how quick Southern Fried Corn is to whip up, your ordinary weekday meals won't ever be ordinary again. Why not bite into golden greatness?

• 2 tablespoons butter • 1 tablespoon bacon grease, optional • 1/2 cup white onion, chopped • 5 ears corn, shucked and kerneled • 1/2 tablespoon all-purpose flour • 1/4 cup milk • 1/2 teaspoon black pepper • 1/4 teaspoon salt • bacon, optional, cooked and crumbled, to taste

Step 1

In a cast-iron skillet on the stove-top over medium heat, melt the butter with the bacon grease.

Step 2

When the butter begins to sizzle, add the chopped onions and corn. Cook until the corn tastes done, about 10 minutes.

Step 3

Add the flour and stir, cooking until the raw flour smell dissipates, about 1 minute.

Step 4

Add the milk and mix well.

Step 5

Once the milk starts to bubble, season the corn with pepper and salt.

Step 6

Stir in the crumbled bacon.

Step 7

Serve hot!
