For the dressing: • 3 tablespoons champagne vinegar • 1 1/2 tablespoons walnut or olive oil • 2 teaspoons honey • 1/4 teaspoon mustard powder For the salad: • 4-5 cups kale, stems removed finely shredded • 1 bell pepper, sliced • 1 1/2 cups watermelon, cut into small cubes • 1 carrot, chopped • 1 1/2 cups blueberries • 1/4 cup walnuts, chopped • 1/2 cup pumpkin seeds


Step 1

Whisk the champagne vinegar, walnut or olive oil, honey, and mustard powder together, ensuring the honey has dissolved and the dressing is thoroughly mixed.

Step 2

Pour the dressing over the kale and mix thoroughly.

Step 3

Place the kale in the refrigerator to chill for about 5-10 minutes.

Step 4

Add the bell pepper, watermelon, carrot, and blueberries into the bowl with the kale.

In a skillet over medium heat, toast the chopped walnuts and the pumpkin seeds, stirring to keep them from burning.
