Zucchini and Squash Medley

This is a veggie dish you will actually crave! Zucchini and Squash Medley has the fresh, juicy garden flavors that make summer satisfying. Accented by garlic and fresh zesty lemon, Zucchini and Squash Medley is like a melody of flavors! This is a side you’ll welcome by any main course!


• 2 tablespoons butter • 1 tablespoon olive oil • 2 medium zucchinis, washed and thinly sliced • 2 medium yellow squash, washed and thinly sliced • 2 cloves garlic, crushed • salt, to taste • pepper to taste • 1/4 lemon, juiced, about 1 tablespoon fresh lemon juice • 1/3 cup parmesan cheese, optional, grated


Step 1

Heat up the butter and oil into a large-sized saute pan.

Step 2

Add in the zucchini, yellow squash, and garlic. Heavily season with salt and pepper.

Step 3

Saute the dish, making sure to stir regularly, and stopping when the veggies are tender, about 5-8 minutes.

Step 4

Once the vegetables are tender, move them from the heat.

Step 5

Drizzle the vegetables with the fresh lemon juice and sprinkle them with the parmesan cheese.

Step 6

Mix until everything is well combined.

Step 7

Serve the medley while still warm and fresh.
